This recipe comes as close to a hamburger in texture and taste as any we have tried. Even better, it is full of healthy ingredients, inexpensive and easy to make. You can grill them, or heat them in a pan or your air-fryer and they come out delicious every time.
Ingredients:
1 Cup Walnuts
1 Cup Chickpeas (drained well)
1 Tablespoon Soy Sauce (low sodium)
2 Tablespoons Tomato Paste
1 teaspoon Vegan mayonnaise
1 teaspoon Hoisin Sauce
1 teaspoon Dijon Mustard
½ teaspoon Garlic Powder
½ teaspoon Onion Powder
1 teaspoon Salt
¼ teaspoon Ground Black Pepper
½ teaspoon Smoked Paprika
1/8 teaspoon Liquid Smoke
1 Cup Cooked Couscous (packed)
½ Cup Vital Wheat Gluten
Instructions:
Chop the walnuts finely.
Process chickpeas with soy sauce and tomato paste in a food processor until well mixed stopping to scrape down sides as needed.
Transfer to bowl with crushed walnuts. Add vegan mayo, hoisin sauce, Dijon mustard, garlic and onion powders, salt, pepper, paprika and liquid smoke and mix well.
Add in the cooked couscous with the wheat gluten and mix slightly. Form dough into a big ball and knead it about 25 times to activate the gluten but not so much you make them tough. Then divide into four parts to form into burger shapes. (Using cooking gloves makes this easier.)
You can grill for the best look alike burgers or pan fry for the same taste minus the grill marks. About 5 minutes per side to get nicely browned. Serve with your favorite toppings and enjoy!!! One of our favorite ways to enjoy these burgers is to use dijon mustard on a healthy whole wheat bun with some homemade coleslaw as our topping. Eat with gusto!!
